            La cerimonia del caffè è una forma rituale di bere il caffè in Etiopia. Essa e una delle influenze più riconoscibili della cultura araba, in quella eritrea ed etiopica. Il caffè viene offerto agli amici, durante le feste, oppure come un premio nella vita quotidiana. Se l'offerta del caffè è gentilmente declinata, molto probabilmente verrà servito del the (shai).

Preparazione
Per prima cosa si provvede alla torrefazione del caffè verde sui carboni ardenti in un braciere. Una volta che i chicchi vengono tostati ogni partecipante ha la possibilità di annusare il fumo aromatico che si diffonde nella stanza. Segue poi la macinazione dei chicchi, tradizionalmente in un mortaio di legno con un pestello dello stesso materiale. Il caffè macinato viene poi messo in un vaso speciale in ceramica per la bollitura. La jebena è generalmente costituita di ceramica ed ha una base sferica, un collo e beccuccio e un manico in cui il collo si collega alla base. Quando il caffè bolle, attraverso il collo si versa dentro ad un altro contenitore per raffreddarlo, e poi viene rimesso nella caffettiera. Per versare il caffè dalla caffettiera, si usa un filtro di crine o altro materiale per evitare che vengano versati nelle tazze anche i fondi di caffè.

Servizio
La padrona di casa versa il caffè a tutti gli astanti in piccole tazzine senza manico senza smettere fino a quando ogni tazza è piena. Parte del caffè inevitabilmente verrà sciupato ma questo è fatto per evitare che i fondi del caffè vadano a finire nella bevanda. Il caffè viene servito tre volte: il primo giro si chiama Awel in tigrino, il secondo kale'i e il terzo bereka (benedetto). La cerimonia del caffè può anche includere la combustione di vari aromi come incenso e gomma arabica.
The coffee ceremony is a ritual form of drinking coffee in Ethiopia. It is one of the most recognizable influences of Arab culture in the Eritrean and Ethiopian. The coffee is offered to friends, at parties, or as a prize in daily life. If the coffee offer is politely declined, most likely you will be served the tea (shai).

Preparation
First, it provides for the roasting of green coffee over hot coals in a brazier. Once the beans are roasted each participant has the opportunity to smell the aromatic smoke wafting into the room. Then follows the grinding of the grains, traditionally in a mortar with a pestle of wood of the same material. The ground coffee is then placed in a special ceramic pot for boiling. The jebena is generally made of ceramic and has a spherical base, a neck and spout and a handle in which the neck is connected to the base. When the bubbles coffee, through the neck pouring in to another container to cool it, and then is put back into the pot. To pour coffee from the coffee pot, using a horsehair filter or other material to prevent them from being paid in the cups even coffee grounds.

Service
The hostess pours coffee all those who stood in small cups without handles without stopping until each cup is full. Coffee Party will inevitably corners but this is done to prevent the coffee grounds cramming into the drink. Coffee is served three times: the first lap is called Awel in Tigrinya, the second and third kale'i bereka (blessed). The coffee ceremony can also include the burning of various herbs as incense and gum arabic.
