            January 2, 2009: For the International (TBA) Group.  This week's theme is hobbies, and my main hobby (other than photography) is baking.  I made this batch of cheesecake squares for a friend who was on vacation the day I brought all my Christmas cookies to work.

This is Day 2 of my 2009 Year in Pictures project.

Cheesecake Squares
Crust:
1 cup flour
1/2 cup brown sugar
1/3 cup butter or margarine
1/2 cup chopped walnuts or pecans (optional)

Filling:
8 oz cream cheese, softened
1/4 cup sugar
1 egg
2 Tbsp milk
2 Tbsp lemon juice
1/2 tsp vanilla extract

Preheat oven to 350 degrees F.
In a large mixing bowl combine flour, brown sugar and butter.  Beat at low speed, scraping the bowl often, until mixture is crumbly.  Stir in nuts.  Reserve 1 cup of mixture for the topping.  Press remaining mixture into the bottom of an 8" square pan.  Bake crust for 8 to 10 minutes or until lightly browned.
In a small mixing bowl, combine all filling ingredients.  Beat at medium speed, scraping bowl often, until smooth.  Spread filling over hot crust.  Sprinkle with reserved crumb mixture.  Continue baking for 23 to 30 minutes or until golden brown.  Cool.  Cut into squares.  Store refrigerated.
