Challah Baking Project - First Session: The Recipe Is Really Way Too Big!

            Okay, here is my first attempt at baking a challah in the last 55 years...;) I did bake poppy seed and onion challot (plural of challah in Hebrew) many years ago, and they were delicious. I don't remember the process at all, so I am basically starting from scratch. 
 
I did buy a baking machine and used it to mix the ingredients at the very beginning. I have some photos of the machine and will add them later. I actually have an assistant, who baked bread a few years ago using a baking machine. That gave me the courage to start this experimental project.

First observation: I really need a clip to hold the recipe up off the counter!! Suzie The Foodie has some candidates on her photostream. More on that later.

Conclusion 1: The recipe is two times to big. Eight cups of flower makes two reasonably large loaves and two small ones. That is more than I can fit on my baking pan. We wound up using just half the dough, and that made one large and one small loaf.

Conclusion 2: The amount of water is too small. The dough was too dry and that made it difficult to mix, knead, and roll out for the braids. I had to moisten the ends so they would stick together. .Next time I will use more water!!
