Jean Philippe Patisserie at Bellagio

            Chocolate sculpture for Chinese New Year.  It is composed of 100 pounds of chocolate, 120 pounds of rolling fondant and 40 pounds of cocoa nibs.  It took 153 hours to create.  Anybody know what rolling fondant and cocoa nibs are?
