Ambositra (Madagascar) - Il s’est passé moins d’une demi-heure entre l’arrivée du bovin encore vivant et cette photo. Outre la violence et l’odeur de la mort propre à tout abattoir, ce qui m’a stupéfait, c’est la rapidité avec laquelle un robuste zébu se transforme en produit de consommation. Malgré la première impression de désorganisation dans le processus d’abattage et de découpe, l’émotion passée, j’ai compris que dans cette effervescence, chacun avait un rôle précis. Un vrai travail à la chaîne particulièrement bien rodé.
S’il y a beaucoup de monde autour de la montagne de viande (www.flickr.com/photos/156294418@N02/53347398822/in/datepo... ), c’est que les acheteurs assistent à la mise à mort, tout comme les vachers qui ont conduit l’animal de son enclos à l’abattoir. Ces derniers se paient sur la bête en repartant avec quelques abats, une patte ou une queue.

Ambositra (Madagascar) - It was less than half an hour between the arrival of the still alive bovine and this photo. Besides the violence and the smell of death specific to any slaughterhouse, what amazed me was the speed with which a robust zebu is transformed into a consumer product. If there are a lot of people around the meat mountain (www.flickr.com/photos/156294418@N02/53347398822/in/datepo...) it is because the buyers are attending the put to death, just like the cowherds who led the animal from its enclosure to the slaughterhouse. The latter are paid on the animal by leaving with a few offal, a leg or a tail.
