For portraits, you either take a very fast photo, before the person really react to it, like I did in this photo, or you prepare the person(s) that you are going to take some portraits of them, then you fx give them coffee, some thing to eat, talk for 30 to 40 minuttes or a bit more without touching the Camera, when you can fell they relax, then you can start to take photos, do not make a big number out of it, be calm and relaxed yourself.
