1 confezione di lumache al naturale
2 porcini
200 gr di finferli
1 patata
1 costa di sedano
1carota
1 spicchio d’aglio
4 cucchiai di olio EVO
½ bicchiere di vino bianco
½ bicchiere di fondo bruno  ( o del sugo di arrosto)
1 cucchiaio di prezzemolo tritato
1 chiodo di garofano
1 presa di noce moscata
Sale/pepe

In una capace casseruola ,appassire nell’olio , l’aglio ,il sedano e la carota tagliati in brunoise.
Unire le lumache ben pulite e lavate e rosolare brevemente. Sfumare col vino  e unire quindi  il fondo bruno cuocendo  a fuoco lento per una mezz’ora. Unire poi la patata tagliata a dadini , i funghi affettati e le spezie regolando anche di sale e pepe ,portando a cottura in un’altra mezz’ora stando attenti a  non lasciar asciugare completamente il fondo di cottura.  All’occorrenza unire poco brodo o dell’acqua calda . Fuori dal fuoco, unire il prezzemolo. 
Servire con del pane grigliato e sfregato con aglio o con polenta  lasciata raffreddare e poi  abbrustolita.
