I cjarsons, o cjalzons, sono dei ravioli tipici del Friuli Venezia Giulia, in particolare della regione della Carnia. Simili nella forma a degli agnolotti o ravioli, si preparano con una pasta fresca a base di farina di grano tenero e acqua, e un ripieno caratterizzato da un contrasto di sapori dolci e salati. Appartenenti alla tradizione povera, un tempo venivano farciti con ciò che si aveva a disposizione in casa: erbette di campo, spinaci, biete, cacao amaro in polvere, cioccolato, uvetta, cannella, ricotta, biscotti, marmellata, grappa, rum…

The cjarsons, or cjalzons, are typical ravioli from Friuli Venezia Giulia, in particular from the Carnia region. Similar in shape to agnolotti or ravioli, they are prepared with fresh pasta made from soft wheat flour and water, and a filling characterized by a contrast of sweet and savory flavours.
