Étoile des brasseurs/Brewers Star - a photo on Flickriver

            L'étoile des brasseurs, étoile du brasseur ou la croix du brasseur est un symbole alchimique ancien dont l'usage est attesté dès 1397 dans la communauté des brasseurs et des malteurs.

Représentation symbolique de l'alchimie brassicole mettant en œuvre les quatre éléments (terre, feu, eau, air), elle servait au départ à éloigner les esprits malins ou les incendies afin de protéger la bière.

Bien vite elle devint une enseigne signalant une brasserie, notamment dans le monde rhénan et bavarois. On la trouve aussi sur les récipients contenant de la bière. Son usage déclina à partir du xviiie siècle.

Cette étoile n'a pas de relation avec le judaïsme (étoile de David). Issue du sceau de Salomon, la croix du brasseur symboliserait la fusion des 4 éléments qui entrent en jeu pour fabriquer la bière : la terre qui fournit le grain, l'eau et l'air qui permettent la germination, l'eau et le feu qui produisent le brassage, le feu et l'air qui déclenchent la fermentation. Une autre interprétation est qu'au Moyen Âge, l'observation remplaçait les connaissances ; la biochimie et la microbiologie étaient inconnues, aussi les réussites ou les échecs étaient imputées à des forces occultes. La croix serait alors une amulette porte-bonheur.

The brewers' star, brewer's star or brewer's cross is an ancient alchemical symbol whose use is attested as early as 1397 in the community of brewers and maltsters.

A symbolic representation of brewing alchemy using the four elements (earth, fire, water, air), it was initially used to ward off evil spirits or fires in order to protect the beer.

Very quickly it became a sign indicating a brewery, particularly in the Rhine and Bavarian world. It is also found on containers containing beer. Its use declined from the 18th century.

This star has no relationship with Judaism (Star of David). Coming from the seal of Solomon, the brewer's cross symbolizes the fusion of the 4 elements which come into play to make beer: the earth which provides the grain, water and air which allow germination, water and fire which produce the stirring, the fire and the air which trigger the fermentation. Another interpretation is that in the Middle Ages, observation replaced knowledge; biochemistry and microbiology were unknown, so successes or failures were attributed to occult forces. The cross would then be a lucky amulet.
