Preparación de bonito en escabeche - a photo on Flickriver

            Ingredientes:

  * 1 kg. de bonito (en dos rodajas)
  * 2 pimientos verdes italianos
  * 2 cebolletas
  * 5 dientes ajo
  * 500 ml. de vinagre de vino (corriente)
  * 330 ml. de aceite oliva
  * Laurel
  * Sal
  * Pimienta negra en grano

Preparación:

  1* Ponemos todos los ingredientes en una olla amplia y las dejamos macerar durante dos horas.
  
  2* Transcurrido el tiempo, lo ponemos a hervir: el primer cuarto de hora a fuego vivo y, después, lentamente y sin dejar de hervir, durante una hora mas.

  3* Lo dejamos reposar y cuando esté frío, limpiamos el bonito de pieles y espinas y lo vamos poniendo los trozos en un recipiente.

  4* Colamos el caldo y cubrimos el bonito.
