Cuy - Guinea Pig, Arequipa, Perú - a photo on Flickriver

            Picante de cuy es un plato típico, servido con arroz papas y un cuy por persona. Para la preparación los cuyes son dorados en aceite caliente, aparte se forma una salsa de cebolla ajos maní molido y ají de panca colorada, la misma que en olla aparte se cose con los cuyes dorados.

Cuy (Guinea Pig) is normally served whole to ensure that one is served the real product. Else, a good possibility exists that there might be substitutions. My Peruvian amigos assure me that rats or other rodent cousins have been passed off in the past to unknowing customers. I have been told by several of my Peruvian friends that cuy is the meat of choice during their special family celebrations in Perú and one can view the painting of the Last Supper in the church of Jesús María in Cusco where the platter before Jesus contains the roasted body of cuy.
