Peach soup with ice-cream & pear chips

4 servings

1 liter (about a quart) apricot juice
3 ripe pears
200 g raspberries
200 g ice cream

1. For the soup: Peel 2 pears, cut into quarters, remove core.
Using blender, whip them together with the apricot juice into puree.
2. For the pear chips: Cut the remaining pear into thin slices, put them on the baking sheet, covered with a sheet of parchment, and place into the preheated till 160C (320F) oven for about 15-20 minutes.
3. Cut the ice cream into cubes.
Move the puree of apricot juice and pears onto plates, add raspberries and ice cream.
Decorate soup with pear chips

1/4 di litro di succo di albicocca
3 pere mature
200 g di lamponi
200 g di gelato

1. Per la zuppa: Sbucciare 2 pere, tagliarle in quarti, togliere i semi interni.
Frullare le pere con il succo di albicocca e ridurle in purea.
2. Per le chips di pera: Tagliare la restante pera a fette sottili, metterle sulla teglia, coperta con un foglio di carta forno, e cuocerle in forno preriscaldato a 160°C (320F) per circa 15-20 minuti.
3. Versare la purea di succo di albicocca e pere su piatti, aggiungere i lamponi e il gelato. Decorare la zuppa con le chips di pera.
