Week 3: Gold Potato Pancakes - a photo on Flickriver

            Recipe from Julia Child ("Julia's Kitchen Wisdom").  If I make these again, I would probably use the already-shredded potatoes you can buy at the store.  But since this was Julia's recipe, I had to boil the potatoes first, let them sit out for an hour to cool, peel them, and then grate them with a box grater.   And I would have fried them in oil, but Julia said I had to use clarified butter.  Above the potato pancake recipe, she listed the steps to make clarified butter..  They did turn out very good, better than the doughy ones I've had at IHOP.  I used Yukon Gold potatoes, which are very yellow.
