43 day (I believe) dry-aged beef ribeye from Mcgee Farms, ON, thinly sliced, stacked (as two) and sprinkled with a cacophony of textures - from silky, dense beef to the mild crunch of the roe - and well balanced savoury flavours. Loved the pop of the briny mild lumpfish roe and the fine slivers of dehydrated bacon chips. But it was the glorious, umami-rich ribeye, that was so sweet and aromatic, that won me over. 

Absolutely lovely. 

Excellent paired with the equally subtle, clean yet elegant MV Pinot Noir, Andre Clouet, 'Silver' Brut, Bouzy, Champagne, France.
