Squab
Black Garlic, Smoked Beet Vierge.

Paired with Bernard Levet, Cote Rotie, La Chavaroche.

Notes: I'm fairly certain that the squab was wrapped in lardo, contributing to the flavor and tenderness of the meat.

Like the foie gras, this dish used beets to complement the liver-like squab.

The sauce vierge was, if I'm not mistaken, was chock-full of chopped black garlic; it had a slightly sweet-tangy garlic flavor.

Next to the squab was a prawn cracker-like chip. I'm not sure what kind of chip it was, but since Blumenthal does a pigeon cracker with his pigeon course, I'm going to take a wild stab and say that this is a squab cracker.

I really liked the wine that was paired with it - it was spicy and juicy.
