Spanish Omelette With "Chorizo" Sausage And "Allioli" Sauce

            Lunch @ "Pura Brasa".

Is it me....or did I taste "Lap Cheong" in this Omelette?

My table had opted from the original version in which the centre of the omelette was served still runny as opposed to the well-done version.
The exterior of omelette was a tad on the thick side even though it kinda resembled a molten lava cake in that the centre of omelette was indeed a tad runny as promised when I cut open it with a knife with egg white spilling out still looking gelatinous floating in yellowish yolk lava.

I was expecting the smoky spiciness of Chorizo.....not the sweet slightly waxy taste of Chinese waxed sausages aka Lap Cheong truthfully so I was a tad confused.
