Thai Sweet Potato Pancakes, Thai Pandan Pancakes (Kanom Khrok Singapore) & Thai Coconut Pancakes (Kanom Ba Bin)

I was recently in Bangkok and had the chance to taste the same items from the famous “Siam Pandan” shop @ Siam Square. My local colleagues called the greenish Thai Pandan Pancakes “Singapore” which puzzled myself.

I later learnt off Wikipedia that Khanom Khrok Bai Toey or Khanom Khrok Singapore is a Thai dessert with the name Khanom Khrok Singapore derived from one of the main ingredients, tapioca starch. Thai folks called tapioca flour "Singapore flour", hence Khanom Khrok Singapore.

This version from “Baan Kanom Thai” has already made a name for itself when it was a stall at the now defunct “Little Thailand” (Golden Miles Complex). It has since moved to this new location at ARC380. Their version was more fragrant and has a more elastic texture that reminded myself of Kueh Ambon, which I found more superior than the starchier version in Bangkok. The second option of the purplish Thai Sweet Potato pancakes has little sweet potato taste and I am less smittened by it.

The flat coconut pancakes (Kanom Ba Bin) was better in Bangkok as it has a crispier edge, a more pleasant roast coconut taste with finer bits of imbedded coconut. The Singapore version was thicker, starchier, less aromatic and I didn’t enjoy the clumsy chunks of coconut meat. The paler version came with added corn, which I thought stole the show instead. Kanom Ba Bin is a popular Thai dessert that comes from Ayutthaya and is made from young coconut, rice flour, coconut milk, sugar and egg.
