Chopping onion – first stage and a nostalgic chef's knife story 20240315-085247

            Many things we do in life are influenced by our childhood. For me, using a chef's knife to chop onions go back to watching my father do this task with easy. Among other things, my father, Frank, was a very good cook. Though my mother did the day to day cooking, my father prepared the big holiday meals. Of course, those big meals were not the full extent of his cooking. We had a 23 cubic foot chest freezer. every once in a while he would cut and package a quarter beef to store for future meals. Around Christmas time he would make pie dough and form it in pie tins for future pies. He made wonderful fudge. And, once in a while he would bring home pounds of jumbo shrimp that he served with shoestring potatoes. When he cooked breakfast for a crowd, he could break eggs by holding two in each hand, breaking and rotating them like a juggler.
This photo demonstrates, in amateurish form, he technique for chopping onions. After peeling the outer layer, dad would slice well into the onion, without going all the way through. Then he would turn the onion and slice cross way through most of the onion. Then it would be easy to get small pieces of onion during the next cut after turning the onion sideways. That is the stage of the chopping process in this photo. After these chopped pieces are bowled, the chopping action of the chef's knife would easily handle the chopping of the balance of the onion. I inherited my father's century old German Steel 9 3/4 inch chef's knife. After using that for years, and marring the edge of my kitchen counter, I purchased for this 7 inch knife and put his knife in the far slot of my knife holder as a fond remembrance of the old days.
