Sinking Stone

This is Sinking Stone, a cocktail created by Ivy Mix for her bar Leyenda in Brooklyn, New York. This drink is a variation on a negroni variation, something that is commonplace in the cocktail creation process. Mix wanted to highlight a particular mezcal, Koch Espadin, that has a particular note of mesquite. Aiding this flavor, she employes the usage of two rums and a spanish white vermouth. The typical negroni bitterness comes from the amaro, Cynar, which is made from artichoke leaves and can effectively temper sweet flavors (the chemical compound called cynarin actually inhibits parts of the sweet taste receptor). The whole drink doesn't feels like a variation though, but something unique. The mezcal and rums collaborate together as a split base while the vermouth and amaro bring balance without it feeling like a copycat. It's a smoky sipper without subtle fruit notes that is eager to please.

1.25 oz Koch Espadin mezcal (see note)
0.5 oz aged jamaican rum (Mix uses Plantation)
0.5 oz vermouth bianco (Mix uses Axta Vino Bianco; see note)
0.5 oz Cynar
0.25 oz Plantation pineapple rum

Combine all of the ingredients into a mixing glass. Add ice and stir until arctic cold. Strain into a chilled rocks glass over a large ice cube. Garnish with a orange peel.

Note: I could not find this particular mezcal, but I found a few different mezcal worked well. Of my collection, Mezcal Alipus San Andrés worked best. Similarly, I could not find Axta vermouth, but Dolin Blanc worked well.
