Runyon Canyon sprayed - a photo on Flickriver

This is Runyon Canyon, a tiki cocktail created by Shaun Dunn for the NoMad Hotel in New York City. This was published in the NoMad Cocktail Book and states its inspiration is a vodka cranberry, also known as a Cape Cod. While a vodka cranberry will hit the spot for some people, but it's definitely a one-note drink. Dunn's tiki-fied reinterpretation brings depth and interest through amontillado sherry and sweet vermouth, both of which sync up well with cranberry. Lime juice and passion fruit syrup come in for tropical flavors as well as balance. The final touch is a few spritzes of a peaty scotch for a smoky aroma. The cranberry and sherry come through early in the experience and then the finish trends towards that hint of passion fruit which will have you coming back for another sip.

1.5 oz vodka
0.75 oz amontillado sherry (Dunn uses Lustau)
0.75 oz sweet vermouth
0.5 oz cranberry syrup (see note)
0.25 oz passion fruit syrup
0.25 oz cane syrup
0.5 oz lime juice
6 sprays peaty scotch (Dunn uses Laphroaig)

Combine all of the ingredients except the scotch into a shaker tin. Add a small scoop of pebble or crushed ice and whip shake until the ice is nearly all melted. Pour unstrained into a chilled belgian beer glass or a tiki mug. Top with pebble ice. Garnish with a sprig of mint and six sprays of peaty scotch.

Note: I used cranberry syrup which I already had on hand instead and I increased the quantity to 0.75 oz. NoMad makes their cranberry syrup by combining by weight: frozen cranberries, straight cranberry juice (not the Ocean Spray Cocktail), and demerara sugar at a 4:4:1 ratio in a saucepan. They simmer it for 10 minutes and then strain out all the solids using a chinois or a nut milk bag. There are other methods for making a cranberry syrup, but bear in mind that cranberry juice is about as acidic as lime juice so you may need to increase or decrease the amount of cranberry syrup as well as the lime juice in this cocktail to achieve balance.
