Bacon & chicken roulade - ready to eat!

I've certainly wrapped bacon around stuff before, but I've never tried a bacon WEAVE. I used a dozen thick slices of bacon and weaved them into a lovely square of bacon deliciousness...

I thinly sliced a couple of boneless, skinless chicken breasts, and arranged them to fill the bacon square.

I cut some mushrooms into very thin slices and spread them evenly over the chicken.

I sprinkled some finely chopped yellow onion, green onion, parsley and sage on top. I finished up with some freshly cracked black pepper.

I rolled this baby up and stuck it in the oven until the internal temperature was almost what I wanted and then used the broiler to finish it up and crisp the bacon.

A very successful experiment, if I must say so myself! Moist and bursting with flavor...
