Le tagliatelle ali' uovo sono
famosissime in tutto il mondo e “alla bolognese” è la versione preferita : si tratta di
pasta fresca, ( sempre emblema della cucina bolognese), tagliata a strisce per creare “la tagliatella” e sono condite con il famoso “ragù”, ovvero un macinato di carne bovina , sedano, carote, cipolla, salsa di pomodoro, pepe e sale. Guai a chi si azzarda a parlare o solo nominare gli “spaghetti alla bolognese”, non esistono o meglio non sono conditi con il ragù, ma bensì con il tonno.

The egg tagliatelle are
very famous all over the world and "Bolognese" is the favorite version: it is
fresh pasta, (always an emblem of Bolognese cuisine), cut into strips to create "tagliatella" and seasoned with the famous "ragù", which is minced beef, celery, carrots, onion, tomato sauce, pepper and salt . Woe betide anyone who dares to speak or even name "spaghetti alla Bolognese", they don't exist or rather they are not seasoned with ragù, but rather with tuna.
