"Candy Cane" Cheesecake

One of the desserts I made for my annual Christmas Eve open house, shot handheld before the guests started to dig in.

I called this one a "Candy Cane" cheesecake; it's a peppermint-flavored, Oreo-crusted no-bake cheesecake decorated with bits of crushed candy canes.

Ingredients

12 Oreo sandwich cookies (I used the ones with the chocolate centers here)
2 tbl. melted butter
1 1/2 lb. cream cheese, room temperature
1 1/4 c. heavy cream
3/4 c. sugar
pinch salt
1 pkg gelatin (2 3/4 tsp)
1/4 c, water
3 tbl. peppermint extract
2-3 candy canes, broken into bits
red food coloring

Directions

Preheat your oven to 350°F.

In a food processor, pulse the cookies into crumbs. Drizzle the crumbs with the melter butter and pulse to combine. Press the crumbs into an even layer in the bottom of a 9" springform pan. Bake the crust for 10 minutes, until set, then set aside to cool.

Sprinkle the gelatin over the water in a small saucepan to bloom.

Beat the cream cheese, salt, and sugar together in a stand mixer fitted with the paddle attachment until fluffy. Reduce the mixer speed and drizzle in the heavy cream, alternately beating and scraping down the sides until a smooth, even texture is reached.

Bring the gelatin to a simmer until completely dissolved, then let cool briefly (but not so much that it sets). With the mixer running, pour in the gelatin and peppermint extract and beat 20-30 seconds until well combined. Quickly pour 2/3 of the batter over the crust and smooth out. Stir a few drops of the red food color into the remaining 1/3 of the batter, then carefully spread this over the first 2/3. Refrigrerate until set.

Run a knife around the outside of the springform pan, then remove the outer form. Press the crushed candy canes into the outside of the cheesecake, then transfer to a serving platter.
