Best guacamole ever - a photo on Flickriver

This is my own recipe for guacamole, and I think it's one of the best ever!

You will need one avocado (I only use Haas) at whatever degree of ripeness you desire, but the riper the more flavorful the guacamole will be.

Before we get to the recipe proper, please don't ruin this by putting friggin' damn lime juice or lemon juice in it!!! It doesn't need any liquids: no beer, no lime juice, no lemon juice, no water, no piss, no barf, no seawater, no soup...I have been in otherwise passable Mexican food restaurants where the guacamole they served was so citrusy that it made you pucker and talk like a cartoon character for the rest of the meal!

The star flavor here should be the avocado, and nothing else should overwhelm it.

There's a jillion instructions on super easy and fast ways to slice open, pit, and peel an avocado, so I'm assuming you know those or can look it up online.

Place the prepared avocado in a shallow bowl and mash it with a fork until it's fairly smooth in consistency, but don't mangle it to death...don't puree it!

The rest of the ingredients you will want to dice fairly small...you don't want big chunks of things standing out and ruining the smooth, creamy texture of the guacamole, or overwhelming the taste of the avocado.

Dice:

a thin slice of onion (about 1/8" thick)
1 clove of garlic
2-3 stems of fresh cilantro, stems, leaves, and all
1 thin slice of tomato (about 1/8"-1/4" thick)
5-6 slices of pickled jalapeno, or 1-2 thin slices fresh

add the above ingredients to the mashed avocado, and add a few shakes of salt and about 4 or 5 turns of fresh ground black pepper.

Stir all ingredients together with the fork, and then use the fork to mash the ingredients together and stir a little more. You're not trying to achieve a puree here, you just want things blended well and for the avocado to be reasonably smooth and not chunky.

Serve with chips (I prefer Tostitos) and enjoy!

One other thing: taste the tomato before you add it into the guacamole! If the tomato has an overly tart or whangy taste it will overpower the guacamole (like lemon or lime juice will) and that's all you'll taste. If you don't have a good, fresh, sweet tomato on hand, leave it out.
