Smashed cucumber salad (拍黃瓜) - a photo on Flickriver

Chinese smashed cucumber salad is a deliciously fresh and crunchy side dish to add to your meals.

To prepare this salad, the cucumber is smashed with something heavy like a rolling pin or the side of a cleaver until it breaks open, then it's chopped into bite-sized pieces and tossed with a flavourful marinade. Serve right away, this is not supposed to sit around for too long.
